Santa’s Peppermint Cookies

It’s been sometime since I’ve posted and I’m just finishing up this exhausting but fun holiday. Christmas is my FAVORITE holiday.  This was the first time I made these cookies for my Christmas platters and they were a HUGE hit!
These pepperminty goodness texture is not quite soft and not quite hard, so lets say it has a medium crunch.  Anyone who loves candy canes would enjoy these. They aren’t overwhelming with peppermint, but the taste is definitely there.  If you prefer more peppermint please add more extract.

Santa’s Peppermint Cookies
makes around 48 cookies

1 cup unsalted butter, softened
1 cup granulated sugar
1 egg
1/4 tsp salt
3 cups all purpose flour
2 1/4 tsp peppermint extract
1-2 tsp red food coloring
1/2 cup crushed candy canes

Icing
3/4 cup confectioners sugar
5 tsp warm water

Preheat oven to 350.

Cream butter and sugar until light and fluffy.
Add egg, peppermint extract and red food coloring.  Mix until blended.
In a medium bowl mix flour and salt together add to the wet ingredients.
Add more red food coloring to reach desired color.  If you would like more peppermint flavor add more extract.
On a parchment lined baking sheet roll 1 tablespoon of dough and place onto sheet. Slightly flatten.
Bake for 8-10 minutes or until bottom of cookie is lightly brown and cookie is set.
Cool cookies completely and make icing.  Use less water if you want the icing to be thicker, you may need to add more confectioner sugar to coat all cookies.
Dip top of cookies into icing and immediately sprinkle with crushed candy canes.
Place on rack or wax paper to dry.
Store in airtight container.

**Just a little tip if you cannot purchase crushed peppermint candy canes. I unwrapped all candy canes and placed on a wax paper lined baking sheet and placed in the freezer for about 10 minutes or until frozen.  Placed frozen canes in a ziploc bag and used my rolling pin beat some stress out. I placed a dishcloth underneath so I wouldn’t beat my table too much.  You may need to use more than one ziploc bags while crushing as the candy will poke holes in the bag**

Things On A Stick

Lately I’ve been making a lot of chocolate lollipops for birthdays,  holidays and events. They are perfect for all ages little ones to adults.  They can be filled with fruit fillings, peanut butter, flavored creams or kept solid.
I hope you all enjoy your Halloween. Anyone who lives on the east coast with me I hope Hurricane Sandy doesn’t cause you any harm or stress!

Flowers and Planes

Cake pops come in different shapes, sizes, colors and designs.  Bakerella really made these tasty morsels well known. She makes some amazing pops that I just don’t have the patience or the brain power to come up with.  We all know she is the queen of cake pops and I bow to her.

My friend has a green thumb to my black thumb.  I wanted to make something pretty and edible for her special day. She enjoys sweets, she adores the color purple and loves gardening and planting.  So I had to make a flower cake pop!
Since I enjoyed making the flower cake pops and with the warm summer days coming to an end in New England I knew these flowers would make me smile. Wouldn’t they make you?  What female wouldn’t want to receive a cake pop and flowers?? Edible ones to boot!  I know I’d be cheesing.  I added some pops with butterflies.  Their wings are delicate beauties however the insect fury body yeah not so pretty.
 A friend placed an order for a retirement ceremony she was having for herself.  She has dedicated 16 years to the United States Air Force.  Amazing!  She wanted to see if I could somehow add her title (Technical Sergeant) and date of service.  Well writing on a round cake pop is difficult and that is a long title.  Thankfully I could abbreviate it to TSgt.  My original plan was to stencil the Air Force logo on the cake pop.  A co-worker of mine made it for me but unfortunately you lose the detail of the logo and couldn’t tell what the image was.  So making it patriotic and personal this is Lisa’s Air Force Pop.  She had a beautiful ceremony, I wish I didn’t have to work and could have attended it.  I was honored she asked me make something for her special day!!
